Deer parmesan

I've had a pack of deer steaks sitting in my freezer for a looong time. I've been pretty unsure of what to do with them, as we usually stick with the old standby of dredging them in flour and deep frying them. Always delicious.... always unhealthy. Luckily, I had a good bit of mozzarella cheese and some leftover homemade pizza sauce, so I figured a deer parmesan would be perfect. It turned out really well actually! Quick, easy, and delicious... and the leftovers were about a million times better than the piece I had right out of the oven. My recommendation: cook one night in advance. Mmmm.


Deer parmesan
Serves 3-4
Prep/cook time: 1 hour

What You'll Need:
  • 5 deer steaks
  • 1/2 c flax meal
  • 1/2 c grated parmesan cheese
  • 1 egg, beaten
  • 1/2 c - 1 c pizza sauce (depends on how much sauce you prefer, here is a link to my no-cook recipe)
  • 1/2 c mozzarella cheese
Preheat the oven to 350F and grease a casserole dish. Combine the flax meal and parmesan cheese in a small mixing bowl.


Dip each steak in egg, then coat with the flax/parmesan mixture and place in the baking dish.


Bake for about 15 minutes, then remove from the oven. Flip each steak and spoon the pizza sauce evenly over them.

Return the pan to the oven for 15 more minutes, then sprinkle mozzarella cheese over the top and let bake for about 5 more minutes or until the cheese is melted.






There you have it! Super easy deer parmesan. I think next time I will pan fry the deer before baking to give it a little bit of crispiness. You can also replace the flax with almond flour. Enjoy!
