Primal pizza frittata

Earlier this week, I posted a recipe for no-cook pizza sauce. Well now it's time to brush that recipe off and put it to use! This is a perfect weeknight dinner for the simultaneously pizza obsessed and health conscious. But be careful... I tried to eat a pepperoni that I pulled off of the frittata right out of the oven, and I burned my upper lip pretty badly. It is not pretty, haha.

It's dangerous work, but someone's gotta do it.

Primal pizza frittata
Serves 2
Prep/cook time: 30 minutes

What You'll Need:
  • 2 eggs
  • 1 tbsp butter
  • 3 tbsp pizza sauce, divided (my super-easy recipe here)
  • 8-10 pepperoni slices
  • 1 oz shredded mozzarella cheese
  • A sprinkle of Italian seasoning
First, preheat the oven to 350F. Beat the two eggs in a small bowl with 1 tbsp of pizza sauce. It will look something like this:

Over medium heat in a cast iron (or oven safe) skillet, melt the butter. When the butter is melted, pour the egg mixture into the pan. Cover the pan and allow the eggs to set, checking frequently.

When the eggs are just set, spread 2 tbsp of pizza sauce on top.

Next, layer the pepperoni and cheese. Sprinkle a bit of Italian seasoning over the frittata before it goes in the oven.

Put the frittata in the oven for 10-15 minutes, or until the cheese is melted to perfection.

Looks good, right? Be careful, it is hot. It's not pizza, but it's got just as much flavor and it's so much healthier for you.... all the good things about pizza, and none of the bad. :)
